I made some spicy sausage tomato sauce for dinner the other day. Since I attend class in the evening and usually work nights, we've been having fewer dinners together. I love buying chunky tomato sauce because its so easy to customize and switch up by adding different proteins, vegetables, and spices. This sauce has a serious kick to it! I'm not sure if its the spicy sausage that I used or the tons of pepper flakes... but it was probably both. If spicy isn't your thing, try using a different protein or fewer pepper flakes. You'll need:
2 Italian Sausages
1 bell pepper, diced
2 cups chunky tomato sauce
1 teaspoon red pepper flakes
oregano, salt, pepper to taste
First, slice up the sausages and remove from casings. Brown them over medium heat in a saucepan. When mostly browned, add bell pepper to the pan. As the sausage continues to cook, break down into smaller pieces. Most of mine ended up being the size of various coins. Continue cooking until peppers are tender.
Turn heat down to medium-low or low, and add the tomato sauce and red pepper flakes. After, add the other spices. I used a rough shake of oregano and salt, then a heavy shake of pepper. Stir the sauce and allow to simmer for about 10 minutes. I served over penne, but it would be especially delicious over ravioli or stuffed shells.
